Grilled courgette & halloumi salad with caper & lemon dressing
Discover the delightful combination of grilled courgette and creamy halloumi in a zesty caper and lemon dressing. A refreshing and flavorful salad.
Ingredients:
- 10-12 baby courgettes, halved lengthways
- 1 tbsp olive oil
- 225g block halloumi, thinly sliced (about 16 slices)
- 1 long shallot, finely chopped
- 1 red chilli, finely chopped
- 1 garlic clove, crushed
- 1 lemon, zested and juiced
- 2 tbsp capers
- 3 tbsp olive oil
Instructions:
- Combine all the dressing components in a bowl along with 1 tablespoon of cold water and season with a pinch of salt. Stir well and set aside.Place the zucchinis in a spacious bowl and drizzle with the oil. Sprinkle a bit of salt, then mix gently.Preheat a grill pan over high heat and place the zucchinis, cut-side down (it's recommended to do this in batches). Grill for 4-5 minutes until grill marks form and the zucchinis soften, then turn over and grill for an additional 3 minutes. Transfer to a shallow bowl and cover with foil to keep hot.Meanwhile, warm a separate large non-stick skillet and place the halloumi. Cook for a couple of minutes until golden on both sides.Place the zucchinis and halloumi on a large plate or platter, then drizzle the dressing on top.
