- 2 tablespoons canola oil
- Salt and freshly ground black pepper
- 2 cups halved cherry tomatoes
- 1 small red bell pepper, finely chopped

- 1 lemon, juiced
- 4 tablespoons olive oil
- Neelys BBQ Dry Rub, recipe follows
- 1 1/2 cups paprika
- 3/4 cup sugar
- 3 3/4 tablespoons onion powder
Instructions:
- Combine the garlic, chipotle peppers, lime juice, olive oil, and cilantro in a food processor or blender and blend until smooth. Put the shrimp in a medium bowl, pour the marinade over them, and mix well. Cover the bowl with plastic wrap and let it marinate for 20 minutes.
- Heat up the grill until it reaches a medium-high temperature.

- Preheat the grill or broiler to medium heat.
- Brush the corn with canola oil and season with salt and pepper. Grill or broil the corn for about 7 minutes, turning occasionally, until they are lightly charred. Remove from the heat and let them cool. Cut the corn kernels off the cob and place them in a large mixing bowl along with the cherry tomatoes, red bell pepper, scallions, and arugula.
- Whisk together lemon juice, olive oil, salt, pepper, and Neelys BBQ Dry Rub in a small bowl to make the dressing.
- Drizzle the dressing over the salad and toss to coat. Serve the salad at room temperature.
- Combine all the ingredients in a bowl and mix until well blended. Store in an airtight container for up to 6 months.
