Grilled corn, basil and ground cherry salad

Ingredients:
- 1/8 cup olive oil
- juice of one small lime
- zest of the lime
- sea salt and ground pepper to taste
- 4 ears grilled corn
- 1 cup husked whole ground cherries (see below)
- 1 cup cucumber, quartered lengthwise, deseeded, and chopped
- 3 tablespoons basil, cut into a fine chiffonade
- 2 tablespoons shallot, finely minced
- 1 teaspoon jalapeno pepper, minced finely (add more if you prefer)
Instructions:
- Rinse the ground cherries while keeping them in their husks. It might be easier to remove the husks if they are slightly wet. Gently pull the husks from the base of the cherry - they should come off easily.
- Make the dressing by mixing together the olive oil, lime juice, lime zest, salt, and pepper. Keep it aside.
- Combine the grilled corn, ground cherries, cucumbers, basil, shallot, and jalapeño in a medium-sized serving bowl and toss the ingredients well.
- Pour in the vinaigrette, mix everything together, and let it cool in the fridge.
