Grilled corn and garlic scape salad

Delight in the flavors of summer with this grilled corn and garlic scape salad! Enjoy the mix of smoky charred corn and unique garlic scape taste.

Ingredients:

  • 5 ears of fresh corn
  • 90g garlic scapes (about 10 scapes)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 cup feta cheese
  • 1 1/2 tablespoons Chives, chopped

Instructions:

  1. Remove the husk from the corn and preheat the grill. Spread a generous amount of butter on 3 corn cobs. Apply approximately 1 tablespoon of oil on the garlic scapes, and season with salt and pepper.
  2. Place the 3 corn cobs coated with butter on the grill over high heat, rotating frequently until they develop a charred appearance. If you have a grill basket, utilize it for the garlic scapes. While they may initially appear tightly coiled, they will straighten out while cooking. Stir them regularly. The corn and scapes should each cook for around 10 minutes until lightly charred.
  3. After cooking, cut the kernels off the grilled and raw corn cobs, and transfer them to a large serving bowl. Dice the garlic scapes into 1cm sections and combine them with the corn. Add the cheese and chives. Drizzle the remaining oil and lemon juice onto the salad, mix well to combine.
