Grilled corn and easter egg radish salad

Enjoy a delightful mix of smoky grilled corn and vibrant Easter egg radishes in this refreshing salad bursting with flavors of summer.

Ingredients:

  • 3 ears corn, husks and silks removed
  • 5 Easter Egg radishes, sliced
  • 2 scallions, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • salt and pepper, to taste

Instructions:

  1. Heat up a grill or grill pan on medium-high heat. Cook the corn for about 15 minutes, turning every 5-7 minutes, until it turns golden brown on most sides. Take it off the grill and let it cool for a few minutes. In the meantime, you can prepare the other ingredients for your salad.
  2. Mix the sliced radishes, scallions, cilantro, and chili powder in a large bowl. Squeeze the lime juice into the same bowl.
  3. Once the corn has cooled down a bit, carefully remove the kernels from the cobs. Add the corn kernels to the bowl with the sliced radish mixture. Mix everything thoroughly, check the seasoning, and then it's ready to be served.
