Grilled chicken with tomato-cucumber salad
Delicious grilled chicken paired with a refreshing tomato-cucumber salad. Perfect blend of flavors and textures for a satisfying meal.
Ingredients:
- 1 ¼ cups plain whole-milk yogurt
- 1 cup packed fresh flat-leaf parsley leaves
- 1 teaspoon lemon zest plus 3 Tbsp. fresh juice (from 2 lemons)
- 1 clove garlic
- 2 tablespoons olive oil, divided, plus more for grill grates
- 1 teaspoon kosher salt, divided
- 4 6-oz. boneless, skinless chicken breasts
- 230g sweet mini peppers, halved lengthwise
- 1 red onion, sliced into ½-in. rings
- 2 6-in. pitas
- 1 5-oz. pkg. salad greens
Instructions:
- Blend together yogurt, parsley, lemon zest, lemon juice, and garlic in a blender until it forms a smooth mixture, which should take approximately 2 minutes. Take half of this mixture and combine it with 1 tablespoon of oil and ½ teaspoon of salt in a small bowl, then set it aside. Put the remaining mixture in a dish, add the chicken, coating it well, and let it sit at room temperature for 15 minutes. Remove the chicken from the marinade (don't use the marinade anymore) and season it with the rest of the salt.Heat the grill to high (450°F to 500°F) and lightly oil the grates. Grill the chicken with the lid on, turning it once, until grill marks form and a thermometer inserted into the thickest part reads 165°F, which should take about 6 minutes per side. Move the chicken to a cutting board and let it rest for around 10 minutes.In the meantime, mix together the peppers, onion, and the remaining 1 tablespoon of oil in a large bowl. Grill the peppers and onions uncovered until they are charred and softened, which typically takes 5 to 7 minutes. Remove them from the grill. Grill the pitas with the lid on, flipping them once, until they are heated through and slightly toasted, about 2 minutes per side.Slice the chicken and roughly chop the onion. Arrange the chicken on a bed of greens with the peppers, onion, reserved yogurt mixture, and pitas.
