Grilled chicken and pepper salad
Delight in the sumptuous flavors of grilled chicken paired with crisp peppers in this vibrant and zesty salad. Perfect for a fresh and satisfying meal.
Ingredients:
- 1 ¼ cups plain whole-milk yogurt
- 1 cup packed fresh flat-leaf parsley leaves
- 1 teaspoon lemon zest plus 3 Tbsp. fresh juice (from 2 lemons)
- 1 clove garlic
- 2 tablespoons olive oil, divided, plus more for grill grates
- 1 teaspoon kosher salt, divided
- 4 6-oz. boneless, skinless chicken breasts
- 230g sweet mini peppers, halved lengthwise
- 1 red onion, sliced into ½-in. rings
- 2 6-in. pitas
- 1 5-oz. pkg. salad greens
Instructions:
- Blend yogurt, parsley, lemon zest, lemon juice, and garlic in a blender until the mixture is smooth, which should take approximately 2 minutes. Take half of this mixture and put it in a small bowl; mix in 1 tablespoon of oil and ½ teaspoon of salt, then set it aside. Transfer the rest of the mixture to a dish, add the chicken, ensuring it's well coated, and let it sit at room temperature for about 15 minutes. Once the time has passed, take the chicken out of the marinade (dispose of the marinade) and season it with the remaining ½ teaspoon of salt.
- Heat up the grill to high (between 450°F to 500°F) and lightly grease the grates. Grill the chicken with the lid on, flipping it once, until grill marks are visible, and a thermometer inserted in the thickest part reads 165°F, which should take around 6 minutes per side. Move the chicken to a cutting board and allow it to rest for approximately 10 minutes.
- In the meantime, mix peppers, onion, and the remaining 1 tablespoon of oil in a large bowl. Grill the peppers and onion without the lid until they are charred and softened, which usually takes about 5 to 7 minutes. Once they are done, take them off the grill. Grill the pitas with the lid closed, flipping them once, until they are warmed through and slightly toasted, around 2 minutes per side.
- Slice the chicken and roughly chop the onion. Present the chicken on a bed of greens along with the grilled peppers, onion, the reserved yogurt mixture, and the pitas.
