Savor the smoky flavors in this delicious Grilled Caesar Salad, topped with a zesty dressing and crunchy croutons for a burst of culinary delight.
Ingredients:
- 3 tablespoons mayonnaise
- 2 tablespoons Worcestershire sauce
- 2 lemons, halved, plus 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon red wine vinegar
- 2 cloves garlic, minced
- 3/4 cup extra-virgin olive oil, plus more for grilling
- 1/4 cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper
- 2 hearts romaine lettuce, cut in half lengthwise
- Three 3/4-inch slices rustic bread, such as levain or baguette
- 1 tablespoon sugar
Instructions:
- Heat up the grill until it reaches medium-high temperature.
- Combine mayonnaise, Worcestershire sauce, lemon juice, mustard, vinegar, and minced garlic in a mixing bowl. Whisk the ingredients together until well mixed. Slowly pour in the olive oil while continuing to whisk. Stir in the Parmesan cheese and keep whisking. Season the dressing with salt and pepper to taste.
- Drizzle some olive oil over the halved romaine lettuce hearts and season with salt and pepper. Put the lettuce cut-side down on the grill and cook until grill marks form, approximately 2 to 3 minutes. Brush olive oil onto the slices of bread and place them on the grill. Grill until both sides have grill marks and the bread is crunchy, which should take about 5 minutes.
- Sprinkle sugar on a small plate. Coat the cut side of the lemons with sugar. Grill the lemon halves until they are slightly charred and have grill marks, around 2 to 3 minutes.
- Cut the bread into small pieces. Arrange the grilled romaine lettuce, croutons, and lemons on a wooden board. Serve with the Caesar dressing on the side.
