Grilled caesar salad

Ingredients:
- 2 garlic cloves
- 3 tablespoons fresh lemon juice
- 1 tablespoons Dijon mustard
- 3/4 cup, plus 3 tablespoons olive oil
- 1/2 cup freshly grated Parmesan, plus shaved Parmesan for serving
- 3 heads romaine hearts, sliced lengthwise in 1/2
- Salt and freshly ground black pepper
Instructions:
- Heat up the grill to medium heat.
- Blend together the garlic, lemon juice, and Dijon mustard in a blender. Slowly pour in 3/4 cup of olive oil while blending to form an emulsion. Add the Parmesan cheese and pulse until combined.
- Lightly coat the romaine lettuce hearts with the remaining olive oil and season with salt and pepper. Grill for about 2 minutes until grill marks form and the lettuce slightly wilts.
- Transfer the grilled lettuce to a cutting board and slice into 2-inch wide pieces. Place the pieces in a bowl and drizzle the prepared dressing over them. Mix gently to cover the lettuce and serve it warm. Top with shaved Parmesan before serving.
