Grilled caesar salad

Indulge in the smoky flavors of a grilled Caesar salad - a delectable twist on the classic dish, with charred romaine, creamy dressing, and savory toppings.

Ingredients:

  • 2 garlic cloves
  • 3 tablespoons fresh lemon juice
  • 1 tablespoons Dijon mustard
  • 3/4 cup, plus 3 tablespoons olive oil
  • 1/2 cup freshly grated Parmesan, plus shaved Parmesan for serving
  • 3 heads romaine hearts, sliced lengthwise in 1/2
  • Salt and freshly ground black pepper

Instructions:

  1. Heat up the grill to medium heat.
  2. Blend together the garlic, lemon juice, and Dijon mustard in a blender. Slowly pour in 3/4 cup of olive oil while blending to form an emulsion. Add the Parmesan cheese and pulse until combined.
  3. Lightly coat the romaine lettuce hearts with the remaining olive oil and season with salt and pepper. Grill for about 2 minutes until grill marks form and the lettuce slightly wilts.
  4. Transfer the grilled lettuce to a cutting board and slice into 2-inch wide pieces. Place the pieces in a bowl and drizzle the prepared dressing over them. Mix gently to cover the lettuce and serve it warm. Top with shaved Parmesan before serving.
