Grilled bread and tomato salad
Explore the delicious flavors of a tangy grilled bread and tomato salad. This simple yet tasty dish is perfect for any culinary enthusiast.
Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 2 garlic cloves, minced
- 230g day-old Italian bread, cut into 3/4-inch-thick slices
- 6 dead-ripe meaty tomatoes, cored, seeded, and cut into quarters
- 1/4 cup minced red onion
- 1/3 cup fruity extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh tarragon
- 1/2 teaspoon kosher salt
- 7 or 8 grindings black pepper
Instructions:
- 1. Heat a small saucepan over medium heat and melt the butter. Once it's partially melted, add the garlic and cook for 3 to 4 minutes until the garlic becomes slightly golden. Take it off the heat and spread this mixture on both sides of each bread slice.
- 2. Grease the grill grates with oil. Preheat the grill by turning on all burners to high and closing the lid for 10 to 12 minutes.
- 3. Place the bread on the grill, cover it, and grill, flipping once, until distinct grill marks appear. Be mindful as depending on the bread's moisture level, this might take as little as 2 minutes (or around 1 minute per side), but typically about 4 minutes. Grill the tomatoes alongside, cover, and grill for a few minutes on each side.
- 4. Transfer the grilled bread to a cutting board, dice into 3/4-inch pieces, and place them in a large mixing bowl. Combine with tomatoes, onion, olive oil, vinegar, herbs, salt, and pepper. Gently mix with your hands. Taste and adjust seasoning as needed. Serve the dish at room temperature.
