Grilled bread and marinated tomato salad

Ingredients:
- 1 garlic clove, smashed

- 910g heirloom tomatoes, cut into 1-inch pieces
- 1 small red onion, thinly sliced
- 1/4 cup red wine vinegar
- 3/4 cup extra-virgin olive oil, plus more for brushing

- 1 loaf country bread (340g), sliced 1/2 inch thick
- 2 bunches arugula (170g each), stems discarded
- 140g ricotta salata, crumbled (1 1/4 cups)
Instructions:
- Start by crushing a garlic clove with a bit of salt on a cutting board using the flat side of a chef's knife until it forms a paste; then place it into a large bowl. Mix in the tomatoes, onion, vinegar, 3/4 cup of olive oil, salt, and pepper. Allow the mixture to sit at room temperature, stirring occasionally, for at least 1 hour or up to 2 hours.
- Prepare the grill. Coat the bread with olive oil and grill on high heat until it becomes crisp and develops a light charred texture, for about 1 minute per side. Let it cool down a bit, then cut it into 1/2-inch cubes.
- Combine the bread and arugula with the tomato mixture, and add the ricotta salata. Toss everything together well and serve immediately.
