Grilled baby potato salad

Ingredients:
- 1360g baby potatoes
- Kosher salt
- Pepper
- 1 red onion (small sliced)
- ½ cup Champagne vinegar
- ¼ cup extra-virgin olive oil (plus more for brushing)
- 1 cup parsley (lightly packed, chopped)
- 2 cups kettle-cooked salt-and-vinegar chips (coarsely crushed)
Instructions:
- Start by filling a large saucepan with water and adding the potatoes. Bring it to a boil, then season with a pinch of salt. Cook the potatoes on high heat until they are soft, which should take around 20 minutes. Once done, drain the water and let the potatoes cool on a baking sheet before cutting them in half.
- While the potatoes are cooling, combine the red onion with Champagne vinegar in a large bowl. Allow them to sit together for 10 minutes.
- Prepare a grill and grease the grate with oil. Place the potato halves on the grill, cut side down, and cook until they have a nice char, which typically takes about 5 minutes. Move the grilled potatoes to the bowl of onions. Drizzle with 1/4 cup of olive oil and mix thoroughly. Let the mixture cool down completely before adding parsley and seasoning with salt and pepper. To finish, sprinkle with potato chips before serving.
