Grilled avocado salad

Ingredients:
- 3 firm, ripe avocados, peeled and halved
- 3 tablespoons extra-virgin olive oil, divided
- 3 tablespoons fresh lime juice (from 2 limes), divided
- 1 ½ teaspoons kosher salt, divided
- ½ teaspoon black pepper, divided
- 340g multicolored cherry tomatoes, halved (about 2 cups)
- ¼ cup fresh cilantro leaves
- 1 ½ ounces Cotija cheese, crumbled (about 1/3 cup)
- ½ cup Pickled Red Onions
Instructions:
- Heat up the grill to a medium temperature (350°F to 400°F). Utilize a brush to evenly coat both halves of the avocado with 1 tablespoon of oil and lime juice. Sprinkle 1 teaspoon of salt and 1/4 teaspoon of pepper equally on both halves. Place the avocado on the grill with the cut side facing down. Grill without covering until the edges start to get slightly charred, which takes around 5 to 7 minutes. Take the avocados off the grill carefully and set them aside.
- Mix the tomatoes, cilantro, and the remaining 2 tablespoons of both oil and lime juice, along with 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium-sized bowl. Allow the mixture to sit for 5 minutes.
- Arrange the avocado halves with the cut side facing upwards on a serving platter. Evenly distribute the tomato mixture, Cotija cheese, and Pickled Red Onions on top of each avocado half.
