Grilled asparagus salad with fried eggs

Ingredients:

  • 450g thick asparagus, trimmed
  • 2 tablespoons unsalted butter, melted
  • Salt and freshly ground pepper
  • 1/4 cup freshly grated Parmigiano-Reggiano cheese
  • 1 tablespoon white wine vinegar
  • 4 large eggs
  • Toast, for serving

Instructions:

  1. Preheat the broiler. Boil the asparagus in a large, deep skillet of salted water until tender-crisp, for about 3 minutes. Using a slotted spoon, move the asparagus to a plate lined with paper towels and gently dry them; keep the liquid in the skillet. Place the asparagus in 4 separate shallow baking dishes. Coat them with butter and season with salt and pepper. Sprinkle with cheese and broil for about 1 minute until they turn golden brown, positioning them 6 inches away from the broiler heat source.
  2. Pour vinegar into the asparagus blanching liquid and bring it to a simmer. Gently crack the eggs into the simmering water, ensuring enough space between them, and poach until the egg whites are cooked but the yolks are still runny, approximately 3 minutes. Using a slotted spoon, carefully take out each egg, pat them dry with paper towels, and place them on top of the asparagus. Serve with some toast.
