Grilled apple salad with maple mustard vinaigrette

Ingredients:

  • Grilled Apple Salad
  • 5-6 cups coarsely chopped spinach
  • 1 apple, cored and sliced
  • olive oil, for griling
  • salt and pepper, to taste
  • 60g pecans, coarsely chopped
  • 90g shaved double gloucester cheese
  • 1/4 small purple onion, thinly sliced
  • Maple Mustard Vinaigrette
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tablespoon maple mustard or substitute
  • 1 tablespoon maple syrup
  • salt and pepper, to taste

Instructions:

  1. Dice the spinach and arrange on a platter. Add sliced onion on top. Cook pecans in a pan until lightly browned, then roughly chop and sprinkle over the salad. Toss apple slices in olive oil and season with salt and pepper. Cook in a grill pan over medium heat for 1-2 minutes per side until grilled lines form and apples soften slightly. Take off the heat, place on top of the salad, and sprinkle with shaved cheese.
  2. For the dressing, combine all components and adjust the seasoning with salt and pepper. Pour the vinaigrette over the prepared salad.
