Grilled apple salad with maple mustard vinaigrette

Ingredients:
- Grilled Apple Salad
- 5-6 cups coarsely chopped spinach
- 1 apple, cored and sliced
- olive oil, for griling
- salt and pepper, to taste
- 60g pecans, coarsely chopped
- 90g shaved double gloucester cheese
- 1/4 small purple onion, thinly sliced
- Maple Mustard Vinaigrette
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon tablespoon maple mustard or substitute
- 1 tablespoon maple syrup
- salt and pepper, to taste
Instructions:
- Dice the spinach and arrange on a platter. Add sliced onion on top. Cook pecans in a pan until lightly browned, then roughly chop and sprinkle over the salad. Toss apple slices in olive oil and season with salt and pepper. Cook in a grill pan over medium heat for 1-2 minutes per side until grilled lines form and apples soften slightly. Take off the heat, place on top of the salad, and sprinkle with shaved cheese.
- For the dressing, combine all components and adjust the seasoning with salt and pepper. Pour the vinaigrette over the prepared salad.
