Grill like an italian with colavita: grilled polenta salad with burrata

Ingredients:
- 2 cups water
- 2 cups 2% milk
- 1 teaspoon salt
- 1 cup Colavita Instant Polenta Cornmeal
- 4 medium tomatoes (chopped)
- 1 small red onion (chopped)
- ¼ cup basil (chopped)
- 2 tablespoons Colavita capers
- 2 tablespoons Colavita Extra Virgin Olive Oil (plus more for grilling)
- 1 teaspoon Colativa Chardonnay White Wine Vinegar
- salt and pepper to taste
- handful of arugula
- 230g burrata
- Colavita Balsamic Glace to drizzle
Instructions:
- Heat water, milk, and salt in a saucepan over medium heat until it reaches a simmer. Slowly stir in cornmeal, ensuring no lumps are formed. Allow it to cook for approximately 5 minutes, stirring occasionally, until the cornmeal is fully cooked. Take the saucepan off the heat, transfer the cornmeal to a 10-inch circular pan, and level the surface with a rubber spatula. Let the polenta cool down to room temperature, then refrigerate for a minimum of 2 hours.
- While waiting, combine tomatoes, red onions, basil, and capers in a bowl. Whisk olive oil and vinegar in a small bowl, then drizzle it over the tomato mixture, mixing it well. Season with salt and pepper according to your preference, and set it aside.
- Get your grill or stovetop grill pan ready. Cut the polenta into 12 equal wedges and brush both sides with olive oil. Grill each side for about 3-5 minutes until the polenta turns a golden brown color.
- Place some arugula on a large serving plate. Arrange the grilled polenta wedges on top and layer with the tomato mixture and burrata cheese. Finish by drizzling balsamic glaze over the dish. Serve immediately.
