Greenmarket caesar salad

Fresh and flavorful greenmarket caesar salad bursting with crisp greens, zesty dressing, savory cheese, and crunchy croutons. Perfect blend of flavors!

Ingredients:

  • 3 cloves garlic, peeled
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon caper juice
  • 1 tablespoon Worcestershire Sauce
  • 110g canned tuna
  • 3/4 cup olive oil, divided
  • 4 tablespoons unsalted butter
  • 1 cup cubed sourdough bread
  • Kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons dry (or fresh) oregano
  • 90g Parmesan, grated
  • 1 head Romaine, cleaned of any outer leaves, quartered lengthwise, washed and dried
  • 1 small head red or green leaf lettuce, leaves separated, washed and dried
  • 1/4 cup fresh basil leaves, stemmed, washed and dried

Instructions:

  1. To prepare the dressing: Crush the garlic cloves and salt using a mortar and pestle until they form a paste. Alternatively, you can also make the dressing in a blender or food processor. Boil a small amount of water in a pot and gently add the eggs. Let them cook for 2 1/2 minutes, then remove them from the water. Next, place the garlic paste in a bowl and mix in the lemon juice, caper juice, Worcestershire sauce, hot sauce, and tuna. Peel the boiled eggs, chop them, and add them to the bowl along with 1/2 cup of olive oil. Whisk the mixture until it becomes smooth. Taste-test for seasoning and adjust if needed. Set the dressing aside for later use.For the croutons: Heat a large skillet over medium heat until it starts to lightly smoke. Add the butter to the skillet, followed by the bread cubes. Season with salt and paprika, then toss everything together. Cook the bread over medium to low heat until it turns golden brown and crispy, which should take approximately 5 to 8 minutes. Sprinkle with salt and oregano, then transfer the croutons to a plate lined with paper towels to drain. Finally, sprinkle some grated Parmesan over the croutons.To serve: In a large salad bowl, mix the lettuces with the prepared dressing until well coated. Add the croutons, basil leaves, and the remaining Parmesan cheese. Toss everything together and serve immediately.
