Green tomato–berry salad with sumac dressing

Ingredients:
- small green tomatoes, cut into 1" pieces
- oz. blackberries (about 1 cup)
- oz. blueberries (about 1 cup)
- tsp. Diamond Crystal or ¾ tsp. Morton kosher salt, divided
- tsp. sugar
- cup extra-virgin olive oil
- cup apple cider vinegar
- Tbsp. honey
- tsp. vanilla extract
- tsp. sumac
- Torn mint leaves (for serving)
Instructions:
- Mix together 2 large green tomatoes, sliced into 1" pieces, 6 oz. blackberries (around 1 cup), 6 oz. blueberries (around 1 cup), 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ tsp. sugar in a big bowl; set it aside.
- Blend ½ cup extra-virgin olive oil, ¾ cup apple cider vinegar, 1 Tbsp. honey, 1 tsp. vanilla extract, ¼ tsp. sumac, and the remaining ¼ tsp. Diamond Crystal or Morton kosher salt in a small bowl. Pour the dressing over the tomato mixture and mix well to cover. Then, keep it in the fridge for 8–12 hours.
- Just before serving, sprinkle torn mint leaves over the salad.
