Delight your taste buds with a refreshing green split pea and basil salad, bursting with vibrant flavors and wholesome ingredients. Perfect for the ultimate culinary experience.
Ingredients:
- 1/2 cup dried split peas
- 2 cups water
- 3 cups Farfalle pasta
- 5 cups water
- 5-6 green onions, sliced
- 2 cups grape tomatoes, sliced in half lengthwise
- 7-8 basil leaves, chopped
- 1 fresh lemon squeezed
- 1/4 cup olive oil
- 1 teaspoon oregano
- 1 clove garlic minced
- 1/8 teaspoon lemon pepper
- salt and pepper to taste
Instructions:
- Heat water until boiling, then put in split peas. Lower the heat and let it gently boil for around 25 minutes or until they are tender. Once done, drain and rinse with cold water while you prepare the rest of the salad.
- Boil water, add pasta and simmer gently until the pasta is cooked to your liking. Be careful not to overcook. Drain the pasta and rinse it with cold water to cool it down.
- Using a small saucepan over medium heat, combine olive oil, minced garlic, and oregano. Cook until the garlic is soft and slightly browned, which should take about 3 minutes. Take it off the heat, mix in the lemon juice, stir well, and set it aside to cool.
- Combine all the ingredients and mix them with the dressing. You can sprinkle some shredded cheese if desired. Your dish is now ready to be served.
