Green salad with tangy mustard vinaigrette

Ingredients:

  • 3 tablespoons red wine vinegar
  • 2 tablespoons whole-grain mustard
  • 1 medium shallot, very finely chopped
  • 1 tablespoon very finely chopped parsley

  • 340g mixed baby greens (12 packed cups)
  • 1 cup of halved grapes
  • 1 cup of chopped and toasted walnuts
  • 1 cup of crumbled Roquefort cheese

Instructions:

  1. Mix together the vinegar, mustard, shallot, and parsley in a medium-sized container. Seal the container and shake well until the mixture is uniform. Next, pour in the olive oil, season with salt and pepper, and shake the dressing until everything is incorporated.
  2. Combine the greens, grapes, walnuts, and cheese in a big bowl. Give the vinaigrette one more shake, then drizzle it over the salad ingredients. Mix everything together and serve immediately.
