Green salad with prosciutto vinaigrette

Delight in the vibrant flavors of a fresh green salad drizzled with a tangy prosciutto vinaigrette. Savory, crisp, and bursting with culinary charm.

Ingredients:

  • slices thin prosciutto (about 30g)
  • garlic clove, finely grated
  • cup olive oil
  • tablespoon fresh lemon juice
  • tablespoon white wine vinegar
  • teaspoon honey
  • Kosher salt and freshly ground black pepper
  • Mixed green raw fruits and vegetables (such as celery, avocado, Bartlett pear, green beans, cucumber, and kiwi), halved, sliced, and/or cut into wedges

Instructions:

  1. Preheat the oven to 150 °C. Place prosciutto evenly on a wire rack placed on a baking sheet with edges and bake until it turns golden and crunchy, around 20-25 minutes. Allow it to cool down, then break it into small pieces.
  2. In a medium bowl, mix together minced garlic, olive oil, lemon juice, vinegar, and honey until well combined. Stir in the crumbled prosciutto; add salt and pepper to season.
  3. For serving, put some of the vinaigrette in a flat bowl and place your choice of fruits and vegetables on top. Add salt and pepper to taste.
  4. Preparation tip: The vinaigrette can be prepared 2 days before serving. Cover it and refrigerate.
