Green salad with goat cheese and pistachios

Ingredients:
- 1/3 cup vegetable oil
- 1/2 cup popping corn
- Kosher salt
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons sugar
- 2 tablespoons toasted sesame seeds
- 2 teaspoons soy sauce
- 1/2 teaspoons garlic powder
- 2 cups shelled unsalted pistachios (230g)
Instructions:
- Preheat the oven to 350° and prepare a baking sheet by lining it with parchment paper. In a large saucepan, mix together the vegetable oil and popcorn. Cover the saucepan and cook over medium heat until the popcorn kernels start popping. Continue cooking and shaking the pan until the popping sounds subside, which should take about 3 to 5 minutes. Transfer the popped popcorn to a large bowl and lightly season it with salt.Clean the saucepan by wiping it. Next, add the olive oil, sugar, sesame seeds, soy sauce, garlic powder, and 2 teaspoons of salt to the saucepan. Cook over medium heat, stirring constantly, until the sugar has completely dissolved, which should take around 3 minutes. Toss in the pistachios and continue cooking while stirring for an additional minute. Spread the pistachios evenly onto the prepared baking sheet and bake for approximately 10 minutes, or until the mixture is bubbling. Transfer the pistachio mixture to the bowl of popcorn and mix everything together thoroughly. Allow the mixture to cool before serving.
