Green potato salad

Ingredients:

  • 7 to 8 scallions, washed, dried and cut into slices (green and white parts)
  • 1 small bunch chives, sliced
  • Kosher salt
  • Freshly ground white pepper
  • 2 tablespoons water
  • 8 tablespoons extra-virgin olive oil
  • 910g red bliss potatoes, washed
  • 3 bay leaves
  • 6 tablespoons red wine vinegar
  • 2 shallots, peeled, quartered lengthwise, sliced thin
  • 2 tablespoons smooth Dijon mustard
  • 1 tablespoon chopped capers
  • 1 teaspoon caper liquid
  • 1 small bunch tarragon, stemmed and leaves finely chopped

Instructions:

  1. Combine the green onions and chives in a food processor or blender. Season with salt and pepper. Blend with water. Slowly pour 5 tablespoons of olive oil through the top of the processor. Taste to adjust the seasoning.
  2. Boil the potatoes in a pot of water, then lower the heat to simmer. Season the water with salt and add bay leaves. Simmer the potatoes until they are soft, about 20 minutes.
  3. In a large bowl, mix together red wine vinegar, shallots, mustard, capers, and tarragon. Whisk in the rest of the olive oil. Adjust the seasoning. Drain the potatoes and remove the bay leaves.
  4. Add the potatoes to the bowl with the dressing and gently crush them with a fork. Season with salt and pepper, then toss in the dressing. Mix in the green onion and olive oil blend. Stir well. Keep warm until ready to serve.
