Green green dressing with a little salad

Indulge in the vibrant flavors of our Green Goddess dressing drizzled over fresh, crisp salad greens. Taste the perfect harmony of tangy and creamy notes.

Ingredients:

  • 1 egg, at room temperature
  • 1/2 teaspoon salt
  • 1/2 teaspoon Dijon mustard
  • Juice of 1/2 a lemon
  • 2 medium green onions, roughly chopped
  • 2 medium stalks of green garlic, roughly chopped
  • Anchovy oil from the 2-ounce tin of anchovies
  • 3/4 cup neutral oil, such as vegetable or canola
  • 1 romaine lettuce heart torn into bite-size pieces
  • 6 thin slices English cucumber
  • 1 large radish, thinly sliced and cut into moons
  • 1 hard-boiled egg, chopped
  • Remaining anchovies from the 2-ounce tin

Instructions:

  1. To prepare the dressing (yield: approximately one cup):
  2. Combine the egg, salt, mustard, lemon juice, scallion, garlic scapes, and anchovy fillets in a small food processor. Start the processor and gradually pour the anchovy oil and vegetable oil through the openings in the lid of the processor. Blend until creamy and quite thick. Keep chilled until it's time to use it for the salad.
  3. To assemble a salad:
  4. Mix together or present all the components in a bowl or on a serving dish. Accompany with the prepared dressing.
