Green grape and rice salad

Ingredients:

  • 2 cups cooked white rice
  • 1 cucumber, peeled and coarsely chopped 
  • 2 green onions, sliced thin
  • 2 cups fresh California green grapes, halved
  • 1/2 cup toasted pine nuts
  • 1/2 cup feta, cut into 1/2 inch cubes
  • 1/2 cup orange juice
  • Juice of 1 lemon
  • 3 tablespoon extra-virgin olive oil
  • Salt and pepper to add taste

Instructions:

  1. Mix the first 6 ingredients in a big mixing bowl. In a tiny bowl, beat the rest of the ingredients to create a delicate dressing. Pour the dressing into the rice mixture. Enjoy at room temperature. You can prepare this dish a day in advance and store it in the fridge.
