Green goddess quinoa bowls with arugula & shrimp

Ingredients:

  • 1 (450g) package frozen cooked quinoa
  • ½ cup green goddess salad dressing
  • 1 (200g) package baby arugula
  • ½ cup crumbled feta cheese
  • 1 (450g) package frozen peeled and deveined cooked large shrimp

Instructions:

  1. Prepare the quinoa according to the microwave instructions on the package, using both packets included. Once cooked, place the quinoa in a wide dish to cool before making the bowls.Place 2 tablespoons of dressing into 4 small sealed containers and store in the refrigerator for up to 4 days.Split the arugula evenly among 4 individual containers (approximately 1 1/4 cups each). Add 1/2 cup of quinoa and 2 tablespoons of feta on top of each. Seal the containers and refrigerate for up to 4 days.In the morning before packing your lunch, defrost one-quarter of the shrimp bag under cold water for about 2 to 3 minutes. Transfer to the meal prep container and add the dressing right before eating.
