Green goddess cobb salad

Ingredients:
- scallions, finely chopped
- cup fresh tarragon leaves with tender stems
- tablespoons chopped fresh chives
- tablespoons chopped fresh cilantro
- tablespoons chopped fresh parsley
- cup olive oil
- tablespoons white wine vinegar
- tablespoons plain yogurt
- avocado, cut into ¼-inch slices, divided
- Kosher salt and freshly ground black pepper
- ounce guanciale (salt-cured pork jowl), very thinly sliced
- rotisserie chicken, skin removed and reserved, meat torn into bite-size pieces
- Little Gem lettuces or other small lettuces, leaves separated
- fennel bulb, thinly sliced
- cup pea shoots (tendrils)
- small red onion, thinly sliced
Instructions:
- Blend together spring onions, tarragon, chives, coriander, parsley, oil, vinegar, yogurt, and a quarter of avocado in a food processor until creamy. Gradually thin out the dressing with water until it reaches a thick consistency similar to heavy cream; season with salt and pepper.
- Place guanciale in a small dry skillet over medium heat, cook while turning occasionally until the fat is released and the meat turns brown and crispy, about 5 to 8 minutes. Then, place on paper towels to absorb excess oil.
- Cook the reserved chicken skin in the same skillet, turning and pressing occasionally, until it turns a golden brown and becomes crispy, which takes about 5 to 8 minutes. Transfer to paper towels along with the guanciale.
- On a serving platter, layer the lettuce, drizzle with half of the prepared dressing, and season with salt and pepper. Top with the chicken pieces, fennel, pea shoots, onions, and the rest of the avocado. Season with salt and pepper. Drizzle the remaining dressing on top and sprinkle the crispy chicken skin and guanciale pieces over the salad.
