Green goddess chicken salad

Ingredients:

  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt 
  • 1/4 cup milk 
  • 1/4 cup packed spinach 
  • 1/4 cup torn fresh basil, plus some for garnish 
  • 1/4 cup fresh parsley, chopped, plus some for garnish 
  • 1 clove garlic 
  • Zest of 1 lemon 
  • Kosher salt and freshly ground black pepper 
  • 3 cups cubed rotisserie chicken
  • 2 cups green grapes 
  • 1/2 cup chopped walnuts 
  • 3 scallions, sliced
  • 1 small cucumber, diced 

Instructions:

  1. To prepare the dressing: Combine mayonnaise, Greek yogurt, milk, spinach, basil, parsley, garlic, and lemon zest in a blender. Season with salt and pepper, then blend until the mixture is smooth. Taste the dressing and adjust the seasoning as necessary. Set the dressing aside.
  2. To assemble the salad: Place chicken, grapes, walnuts, scallions, and cucumber in a large bowl. Pour the prepared dressing over the salad ingredients and mix well.
