Green bean, wheatberry and barley salad

Ingredients:
- 450g greeen beans, cleaned and cut in half
- 1/2 cup wheatberries, cooked and cooled
- 1/2 cup barley, cooked and cooled
- 3 tablespoons fresh dill finely chopped
- 1/3 cup 3 parts good olive oil to one part balsamic vinegar
- salt and pepper to taste
- 1 finely minced shallot
Instructions:
- Put the beans in a saucepan with sufficient water to cover them and a generous amount of salt. Heat until it starts boiling and then cook for 1 to 2 minutes, adjusting based on your desired tenderness. After that, drain the beans and quickly submerge them in a bowl of ice water to halt the cooking process.
- Beat together the olive oil, vinegar, shallot, salt, and pepper. Combine the cooled barley, wheatberries, and green beans in a bowl and mix in the prepared dressing with dill. Adjust the seasoning as needed and serve the dish at room temperature.
