Green bean salad with seared ham

Ingredients:
- 2 tablespoons unsalted butter
- 1 ham hock, split by the butcher
- 2 medium onions, chopped
- 5 garlic cloves, minced
- Kosher salt
- Freshly ground black pepper
- 1360g baking potatoes
- 8 cups chicken stock
Instructions:
- Preheat a slow cooker on high heat. Mix in the butter until it's completely melted, then add the ham hock and cook until browned on both sides, around 5 minutes. Add the onions, garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper and cook until they turn golden, stirring occasionally, for about 6 minutes. Peel and dice the potatoes into bite-sized pieces. Lower the heat to low and mix in the potatoes and stock. Let the soup cook until the potatoes start to break down, approximately 6 hours. Take out the ham hock and let it cool until warm. Remove the meat, discard the bones, and put the meat back into the slow cooker. Season the soup with salt and pepper according to your preference before serving.
