Green bean salad with prosciutto, gruyère and walnuts

Ingredients:
- 1/4 cup walnuts
- 450g green beans, trimmed and cut into 1 1/2-inch lengths
- 2 tablespoons extra-virgin olive oil
- One 1 1/4-ounce piece prosciutto, finely chopped
- 2 teaspoons balsamic vinegar
- Kosher salt and freshly ground pepper
- 40g Gruyère cheese, cut into 1/4-inch dice
Instructions:
- Toast the walnuts in a small skillet over medium heat until they turn slightly golden and release a pleasant aroma, which should take around 5 minutes. Allow them to cool down before roughly chopping them.
- Boil a generous amount of water in a large saucepan with some salt. Put in the green beans and cook them until they are just tender but still have a crunch, usually for about 3 minutes. Strain and rinse them with cold water until they cool. Gently pat them dry.
- Heat up 1 tablespoon of olive oil in a small skillet. Cook the prosciutto over medium heat until it becomes crispy, which typically takes about 6 minutes. Place the cooked prosciutto on paper towels to remove excess oil.
- In a large mixing bowl, mix the remaining 1 tablespoon of olive oil with vinegar and season it with salt and pepper. Add the toasted walnuts, green beans, crispy prosciutto, and grated Gruyère cheese, and mix everything together until well combined. Serve immediately.
