Green bean salad
Delight in the fresh crunch of green beans in this zesty salad recipe. Tossed with a tangy vinaigrette, it's a burst of flavor in every bite.
Ingredients:
- 230g green beans
- 230g yellow wax beans
- 110g crumbled blue cheese (or goat cheese)
- 1/4 cup dried cranberries
- 1/4 cup candied walnuts
- 1 tablespoon minced chives
- 6 slices cooked turkey bacon, cut into 1/4-inch pieces
- 1 tablespoon Dijon mustard
- 1 tablespoon white wine vinegar or champagne vinegar
- 1 shallot, minced
- 3 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper
Instructions:
- To make the salad: Start by heating a pot of water until it boils. Prepare a bowl of ice water. Cook the green beans in the boiling water until they are slightly tender. Then, quickly move them to the ice water to halt the cooking process. Repeat the same step with the wax beans. After blanching, make sure to drain the beans thoroughly before using them.
- Combine the blanched green beans and wax beans with blue cheese, cranberries, walnuts, chives, and bacon in a big bowl.
- For the dressing: Whisk together Dijon mustard and vinegar in a small bowl until they are well combined. Mix in the shallots. Slowly whisk in the olive oil until the mixture thickens. Season the dressing with salt and pepper to taste.
- Pour the dressing over the salad and mix everything well. Optionally, sprinkle some freshly ground black pepper on top for extra flavor.
