Green apple and celery salad with walnuts and mustard vinaigrette
Enjoy a crunchy and tangy delight with our delicious green apple and celery salad. Topped with walnuts and dressed in a zesty mustard vinaigrette.
Ingredients:
- /4 cup fresh lemon juice
- /4 cup Dijon mustard
- teaspoons honey
- /3 cup extra-virgin olive oil
- large bunch celery with leaves
- large Granny Smith apples, peeled, quartered, cored; each quarter cut into 2 wedges, then thinly sliced crosswise into triangle shapes
- /4 cup walnuts, toasted, chopped
Instructions:
- Combine the first 3 ingredients in a small bowl and mix well using a whisk. Slowly add oil while whisking. Season the vinaigrette with salt and pepper.
- Cut off the celery leaves and chop enough to make 1 cup. Slice the stalks thinly at a sharp angle. Place the celery slices in a bowl of cold water. Preparation tip: The vinaigrette, celery leaves, and sliced celery can all be made the day before. Remember to cover each one separately and store in the refrigerator.
- Remove the celery from the water and dry it gently with paper towels. Mix the celery, celery leaves, apples, and walnuts in a large bowl. Pour the vinaigrette over the salad and mix well. Season the salad with salt and pepper to your liking.
