Greek tortellini salad

Ingredients:

  • 280g refrigerated cheese tortellini (2 1/2 cups)
  • ¼ cup crumbled feta cheese
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red-wine vinegar
  • 1 tablespoon chopped fresh oregano
  • ½ teaspoon ground pepper
  • ¼ teaspoon salt
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1 cup sliced spinach
  • ¼ cup chopped red onion

Instructions:

  1. Start by boiling a big pot of water. Put in the tortellini and cook until they are almost soft, which should take around 4 minutes. Sieve out the water.
