Greek-style chicken salad

Enjoy a delicious Greek-style chicken salad that combines fresh vegetables, feta cheese, juicy chicken, and tangy dressing for a burst of Mediterranean flavors.

Ingredients:

  • 2 cups Shredded Chicken Master Recipe (see associated recipe)
  • 1 teaspoon finely shredded lemon zest
  • ½ teaspoon dried oregano, crushed
  • 6 cups torn romaine lettuce
  • 1 ½ cups chopped cucumber (1 medium)
  • 1 cup grape tomatoes, halved
  • ¾ cup chopped yellow sweet pepper (1 medium)
  • ½ cup thinly sliced red onion, rings separated
  • ½ cup crumbled reduced-fat feta cheese (60g)
  • ¼ cup pitted Kalamata olives, halved
  • 4 Lemon wedges for garnish

Instructions:

  1. Mix chicken, 1/4 cup vinaigrette, lemon peel, and oregano in a medium bowl; leave aside.
  2. While waiting, mix lettuce with the remaining 1/4 cup vinaigrette in a large salad bowl. Put 1 1/2 cups of lettuce in each of four flat bowls. Place about 1/3 cup of cucumber, 1/4 cup of tomatoes, 3 tablespoons of sweet pepper, and 2 tablespoons of onion on top of each portion. Place the chicken mixture in the middle of each bowl. Sprinkle with 2 tablespoons of feta cheese and 1 tablespoon of olives. Optionally, serve with lemon wedges.
