Greek salad of sorts
Mediterranean-inspired dish with fresh cucumbers, tomatoes, kalamata olives, and feta cheese, finished with a tangy vinaigrette. A feast for the taste buds!
Ingredients:
- 450g ripe red tomatoes (about 2 large), cored and cut into 1/2 -inch pieces
- 1/2 red onion, cut into 1/4 -inch dice
- 1/2 English cucumber, cut into 1/2-inch pieces
- 1 red bell pepper, cored and cut into 1/2-inch pieces
- 1/2 cup parsley, finely chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup pitted kalamata olives, chopped
- 70g feta, crumbled (about 1/2 cup)
- 4 medium peperoncini, stemmed and chopped
- 2 cups salted pita chips, broken into pieces
- 1/2 cup Greek Vinaigrette (see Note)
Instructions:
- Mix all the ingredients in a big bowl and make sure they are covered with the vinaigrette. Present the dish.
