Greek salad

Savor the fresh flavors of crisp cucumbers, juicy tomatoes, tangy feta cheese, and briny olives in this classic Mediterranean dish. Perfect for a light and refreshing meal.

Ingredients:

  • 1 cup classic olive oil
  • 1.5 teaspoons lemon juice
  • 3 tablespoons white wine vinegar
  • 1.5 tablespoons fresh dill
  • 2 teaspoons minced fresh garlic in jar
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons buttermilk
  • 2 tablespoons real mayonaise
  • 1/2 teaspoon Lavender's all-purpose Greek seasoning
  • 1.5 teaspoons sugar
  • 1.5 teaspoons Grey Poupon Dijon mustard
  • Sea salt to taste
  • Black pepper to taste

Instructions:

  1. Blend all ingredients in a food processor until well combined. Keep the mixture in the fridge and ensure it remains chilled if you don't plan to use it immediately. Prior to serving, it may be necessary to mix or swirl the dressing as the oil and other components could separate over time. This dressing recipe yields around 1.5 cups. Notes: 1) The dill from our garden had been stored in the refrigerator for a week, resulting in a milder flavor. You might consider reducing the amount used initially, perhaps starting with a couple of small pinches and adjusting to suit your taste preferences. 2) While we utilized 1/2 teaspoon each of salt and pepper, feel free to season according to your own taste preferences as everyone's preferences for salt and spices can vary. Toppings for the Greek Salad: We opted for fresh lettuce from our garden, though any variety will suffice. Alternatively, fresh spinach leaves would work well too. Arrange English cucumbers, cherry tomatoes, red or yellow bell peppers, red onions, kalamata olives, and feta cheese on top of the salad. We recommend seasoning with salt and pepper after adding the toppings. Rather than tossing the salad, we delicately arranged the beautiful toppings on display! Serve the dressing in a separate container and allow your guests to dress their own salads to their liking!
