Greek salad

Ingredients:

  • Tbsp. extra-virgin olive oil
  • Tbsp. red wine vinegar
  • tsp. Dijon mustard
  • tsp. dried oregano
  • Kosher salt, freshly ground pepper
  • large cucumber, coarsely chopped
  • medium green bell pepper, ribs and seeds removed, thinly sliced
  • small red onion, thinly sliced
  • oz. tomatoes, preferably a mix of sizes, halved, quartered, or sliced
  • cup Kalamata olives, pitted, torn
  • oz. feta, cut into thin slabs

Instructions:

  1. In a big bowl, mix together 3 tablespoons of high-quality olive oil, 3 tablespoons of red wine vinegar, 2 teaspoons of Dijon mustard, and 1 teaspoon of dried oregano until well combined. Season this mixture with kosher salt and freshly ground pepper.Include 1 large cucumber that is roughly chopped, 1 medium green bell pepper with ribs and seeds removed and thinly sliced, 1 small red onion thinly sliced, 12 ounces of tomatoes (a variety of sizes, halved, quartered, or sliced), and 3/4 cup of pitted Kalamata olives torn into the dressing mixture. Gently toss everything together to ensure all ingredients are coated. Introduce 6 ounces of feta cheese, thinly sliced, into the bowl and gently mix everything together.
