Greek potato salad
Delicious Greek potato salad with fresh herbs, tangy olives, and creamy feta cheese. Bursting with Mediterranean flavors, it's a perfect side dish for any meal.
Ingredients:
- 910g red potatoes, washed, with skins
- 1 cup olive oil
- 3 shallots, chopped
- 1 1/2 bunches oregano, leaves only, chopped
- 2 teaspoons fresh lemon juice
- 1 teaspoon salt
- 1/4 teaspoon white pepper
Instructions:
- Slice potatoes thinly, about 1/8-inch thick, and place in a big bowl. Rinse under cold water until water is clear.
- In a large pot, boil water with salt. Add the potatoes, return to a boil, and cook until they are just slightly tender, approximately 3 to 5 minutes. Drain using a colander.
- In a medium bowl, mix together the rest of the ingredients. Add the slightly warm potato slices and mix well. You can serve it right away or refrigerate it. The potato salad will stay fresh in a sealed container in the fridge for 2 to 3 days.
