Greek pork chops with tomato and cucumber salad

Ingredients:

  • 5 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 3 tsp olive oil, divided
  • 2 cloves garlic, minced
  • 4 bone-in pork chops
  • 3/4 cup plain Greek yogurt
  • 1 1/2 tbsp fresh dill, chopped
  • 1 1/2 cups diced grape tomatoes
  • 2 cucumbers, peeled and diced
  • 1/2 red onion
  • 1 tsp sugar
  • salt and pepper, to taste

Instructions:

  1. Mix together 2 tablespoons of red wine vinegar, dried oregano, 2 teaspoons of olive oil, and garlic until well combined.
  2. Coat the pork chops evenly with the marinade in a container or sealable plastic bag.
  3. Allow the pork chops to marinate for at least 1 hour, but ideally overnight.
  4. Combine 1 tablespoon of red wine vinegar, 1 teaspoon of olive oil, yogurt, dill, and 1/2 cup of diced cucumber.
  5. Stir the ingredients until thoroughly combined.
  6. Cover the mixture and refrigerate.
  7. Mix together tomatoes, the remaining diced tomatoes, red onion, the remaining 2 tablespoons of red wine vinegar, and sugar.
  8. Season with salt and pepper, then set the mixture aside.
  9. Preheat the grill to a medium-high temperature.
  10. Grill the pork chops for 4-6 minutes on each side, adjusting the cooking time based on the thickness of the pork chops, until they reach the desired level of doneness.
  11. Remove the pork chops from the grill and let them rest for 2 minutes.
  12. Serve the pork chops.
