Greek pork chops with tomato and cucumber salad

Ingredients:
- 5 tbsp red wine vinegar
- 1 tsp dried oregano
- 3 tsp olive oil, divided
- 2 cloves garlic, minced
- 4 bone-in pork chops
- 3/4 cup plain Greek yogurt
- 1 1/2 tbsp fresh dill, chopped
- 1 1/2 cups diced grape tomatoes
- 2 cucumbers, peeled and diced
- 1/2 red onion
- 1 tsp sugar
- salt and pepper, to taste
Instructions:
- Mix together 2 tablespoons of red wine vinegar, dried oregano, 2 teaspoons of olive oil, and garlic until well combined.
- Coat the pork chops evenly with the marinade in a container or sealable plastic bag.
- Allow the pork chops to marinate for at least 1 hour, but ideally overnight.
- Combine 1 tablespoon of red wine vinegar, 1 teaspoon of olive oil, yogurt, dill, and 1/2 cup of diced cucumber.
- Stir the ingredients until thoroughly combined.
- Cover the mixture and refrigerate.
- Mix together tomatoes, the remaining diced tomatoes, red onion, the remaining 2 tablespoons of red wine vinegar, and sugar.
- Season with salt and pepper, then set the mixture aside.
- Preheat the grill to a medium-high temperature.
- Grill the pork chops for 4-6 minutes on each side, adjusting the cooking time based on the thickness of the pork chops, until they reach the desired level of doneness.
- Remove the pork chops from the grill and let them rest for 2 minutes.
- Serve the pork chops.
