Greek flatbreads & salad

Ingredients:
- 300g self-raising flour, plus extra for dusting
- 300g Greek yogurt
- ½ cucumber, deseeded and chopped
- 200g cherry tomatoes, quartered
- 1 red onion, chopped
- 150g feta, crumbled
- 100g pitted Kalamata olives, sliced
- small handful of parsley, chopped
- small handful of mint, leaves picked and chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
Instructions:
- Mix together the flour, yogurt, and 1 teaspoon of salt in a bowl until the mixture comes together to form a dough. Transfer the dough onto a floured surface and gently knead it until it becomes smooth. Cut the dough into six equal portions, then flatten and shape each piece into an oval, approximately the thickness of a coin. Cover with a fresh kitchen towel as you repeat this process with the remaining dough, stacking the flatbreads with a generous dusting of flour in between to prevent sticking.Combine the rest of the ingredients for the salad and season to taste. Heat a griddle pan over medium heat or wait for the barbecue coals to turn ashen, then cook the flatbreads for 2-3 minutes on each side until they are golden brown and slightly charred. Keep the cooked flatbreads warm under a kitchen towel until you are ready to serve them. For the best flavor, enjoy on the same day. Serve alongside the prepared salad.
