Greek couscous

Ingredients:
- 2 pieces sun-dried tomatoes, finely chopped
- 1/4 cup onion, finely chopped (divided)
- 1 cup water
- 1 cup couscous (dry)
- 1/4 teaspoon salt
- 5 jumbo black olives
- 1/2 cup feta cheese, crumbled
- 1 tablespoon fresh basil, chopped
- 2 tablespoon greek salad dressing with feta
- 1 small garlic clove, minced
Instructions:
- Combine the tomatoes, half of the onion, and water in a small bowl and microwave until it starts boiling. Mix in the salt and couscous, stir well, and let it sit covered for 5 minutes.
- Use a fork to separate the couscous grains, then mix in the rest of the onion, black olives, feta cheese, basil, Greek dressing, and garlic.
