Greek couscous

Ingredients:

  • 2 pieces sun-dried tomatoes, finely chopped
  • 1/4 cup onion, finely chopped (divided)
  • 1 cup water
  • 1 cup couscous (dry)
  • 1/4 teaspoon salt
  • 5 jumbo black olives
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoon greek salad dressing with feta
  • 1 small garlic clove, minced

Instructions:

  1. Combine the tomatoes, half of the onion, and water in a small bowl and microwave until it starts boiling. Mix in the salt and couscous, stir well, and let it sit covered for 5 minutes.
  2. Use a fork to separate the couscous grains, then mix in the rest of the onion, black olives, feta cheese, basil, Greek dressing, and garlic.
