Greek citrus salad
Indulge in the flavors of Greece with this zesty and refreshing citrus salad. Bursting with Mediterranean ingredients, it's a culinary delight.
Ingredients:
- 4 blood oranges
- 1 cup crumbled feta
- 1/2 cup chopped black olives
- 1/4 cup olive oil
- 2 tablespoons chopped fresh mint
- 1/2 teaspoon dried oregano
- 1 jalapeno pepper, seeded and diced (or keep the seeds in for some extra spice!)
- 1/2 large cucumber, cut into thick slices then quartered
- 1/2 red onion, diced

Instructions:
- Using a fine grater, extract 1 teaspoon of the blood oranges' outer skin into a bowl. Remove the peel and divide the oranges into sections (or cut into circles) and include them in the bowl with the grated skin. Mix in the feta cheese, olives, olive oil, mint, oregano, jalapenos, cucumbers, onions, and a pinch of salt and pepper. Mix well to blend all the ingredients. Sample the mixture and modify the seasoning as needed.
