Greek beef kebabs with cucumber salad

Delight in the Mediterranean flavors of Greek beef kebabs paired with refreshing cucumber salad. A tantalizing dish bursting with savory and zesty tones.

Ingredients:

  • 230g ground beef, 90%-lean or leaner
  • 230g ground lamb
  • ⅓ cup lemon juice
  • 1 small onion, quartered
  • 2 cloves garlic, peeled
  • 8 pitted green olives
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon ground cumin, plus more for serving
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
  • Harissa, (see Ingredient Note) for serving

Instructions:

  1. Combine beef, lamb, and lemon juice in a large bowl. Mix gently until well combined. Let it marinate in the fridge for 60 minutes.
  2. Drain the excess liquid by transferring the meat to a sieve and pressing gently. Use a food processor to chop onion, garlic, and olives until coarse. Add this mixture to the marinated meat along with olive oil, cilantro, parsley, 1 tablespoon of cumin, salt, and pepper. Mix gently until everything is mixed well.
  3. Set the wire rack on a large baking sheet lined with foil and place it in the upper third of the oven. Preheat the broiler.
  4. Shape the meat mixture into 12 thin patties, each about 2 1/2 inches wide and 1/4 inch thick, using around 3 tablespoons for each patty. Put them on the wire rack.
  5. Broil the patties for 8 to 10 minutes until they are browned and fully cooked. Optionally, serve them with extra cumin and harissa on the side.
