Ingredients:
- 1/2 cup quick pearled barley
- 12 cherry tomatoes, quartered
- 1/2 English cucumber, quartered, sliced
- 1 cup crumbled feta cheese
- 1/4 red onion, diced (or to taste, depending on size of onion)
- 60g Kalamata olives, well-drained, roughly chopped
- 1/4 cup chopped flat-leaf parsley
- 1 teaspoon dried Mediterranean oregano
- 2 tablespoons Greek vinaigrette, or to taste
- 1 tablespoon red wine vinegar, or to taste
- Salt and pepper to taste
Instructions:
- Prepare barley as instructed on the packaging. If necessary, remove excess water after cooking. Allow it to cool down.
- Combine the cooled barley with tomatoes, cucumbers, feta cheese, red onions, Kalamata olives, parsley, and oregano. Season with salt and pepper to your liking. If you intend to eat the whole salad in one go, mix in Greek vinaigrette and red wine vinegar to suit your taste. For storing and consuming over a few days (e.g., for lunches), use a small amount of dressing and vinegar initially, and just before serving, add a bit more for freshness.
