Grapefruit salad with honey-mint dressing

Ingredients:

  • 2 white grapefruits
  • 2 ruby red grapefruits
  • 2 tablespoons clover honey
  • 2 tablespoons finely chopped fresh mint

Instructions:

  1. Prepare the grapefruits: Cut off the top and bottom of each grapefruit, place the fruit on a flat surface and remove the peel, white pith, and a thin layer of fruit. Over a bowl, hold the fruit with one hand and use a small knife to separate each segment from the membrane. Put the segments in a bowl. Squeeze any remaining juice from the membranes into the bowl, then discard the membranes. Place a strainer over a large measuring cup and transfer the segments into the strainer. Keep 1 cup of the juice aside.
  2. Mix the honey and mint with the saved grapefruit juice. Display the grapefruit segments on a plate or in a dish and drizzle the dressing over them.
