Grapefruit salad

Ingredients:
- ¼ cup thinly sliced red onion
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon champagne vinegar
- 1 tablespoon honey
- 1 teaspoon lightly crushed black or pink peppercorns
- ½ teaspoon salt, divided
- 3 medium grapefruit, peeled and sliced crosswise into 1/2-inch-thick slices
- 2 medium ripe avocados, peeled, pitted and chopped
- 3 tablespoons fresh pomegranate arils
- 2 tablespoons fresh mint leaves, large leaves torn in half
Instructions:
- Put diced onion in a small bowl and submerge it in ice water. Allow to sit for 10 minutes. Drain thoroughly and gently dry with a paper towel.
- Combine oil, vinegar, honey, crushed peppercorns, and a 1/4 teaspoon of salt in a separate small bowl by whisking together.
- Place grapefruit slices on a large serving dish and layer with sliced avocado. Sprinkle with the remaining 1/4 teaspoon of salt. Add the drained onion and pomegranate seeds on top. Garnish with mint leaves. Drizzle the dressing made of honey and peppercorn over the salad.
