Grapefruit-pomegranate salad

Freshen up your taste buds with a zesty grapefruit-pomegranate salad bursting with vibrant flavors of citrus and juicy arils. Perfect for a refreshing meal!

Ingredients:

  • 2 medium ruby grapefruits
  • 1 teaspoon finely grated grapefruit zest
  • 1 medium shallot, minced
  • 1 teaspoon white wine vinegar
  • 2 medium Hass avocados, sliced 1/4 inch thick
  • Salt
  • 2 tablespoons extra-virgin olive oil
  • Freshly ground pepper
  • Chervil leaves, for garnish

Instructions:

  1. Slice off the grapefruits' skin and the bitter white pith using a sharp knife. Carefully separate the segments over a bowl by cutting in between the membranes. Extract the juice from the membranes into the same bowl.
  2. Move 2 tablespoons of the juice to a separate bowl. Combine it with the zest, shallot, and vinegar; allow the dressing to sit for 10 minutes.
  3. Season the avocado slices with salt and place them on plates along with the grapefruit segments. Mix the oil into the dressing; add salt and pepper to taste. Drizzle the dressing over the grapefruit and avocado, decorate with chervil, and present.
