Grapefruit, hearts of palm & shrimp salad

Ingredients:
- 2 red or pink grapefruit
- 8 teaspoons packed light brown sugar
- ¼ teaspoon ground cinnamon or cardamom
- 2 teaspoons melted butter
- 2 tablespoons heavy cream
- 2 tablespoons nonfat or low-fat plain Greek yogurt
- 1 teaspoon granulated sugar
- ¼ teaspoon vanilla extract
Instructions:
- Adjust the position of the oven rack so that it is approximately 3 inches away from the heat source and turn on the broiler. Cover a baking sheet with a sheet of foil.
- Slice each grapefruit in half and trim a thin piece off the bottom to stabilize it. Using a grapefruit knife or a paring knife, separate each segment of the grapefruit and remove any seeds. Place the grapefruit halves on the foil-lined baking sheet. Mix brown sugar with cinnamon or cardamom in a small bowl. Spread butter on each grapefruit half and then sprinkle around 2 teaspoons of the sugar mixture on top.
- Broil the grapefruit, making sure to keep an eye on it and rotating the pan halfway through, until the tops are bubbly and turn a golden brown color, which should take around 7 to 12 minutes.
- While the grapefruit is broiling, whip the cream in a small bowl until it becomes stiff. Mix in yogurt, granulated sugar, and vanilla until everything is well combined. Serve each grapefruit half with a generous dollop of the vanilla cream on top.
