Ingredients:

  • 910g boneless pork shoulder roast (Boston butt), trimmed of excess fat
  • 6 garlic cloves, finely chopped
  • 1 teaspoon kosher salt
  • 1 cup chicken stock
  • 1 teaspoon orange zest plus 1 tsp. fresh orange juice
  • 2 tablespoons fresh lime juice (from 2 limes)
  • 6 6-in. sub rolls
  • ⅓ cup Dijon mustard
  • 90g thinly sliced deli ham
  • 90g thinly sliced Swiss cheese
  • 1 whole dill pickle, thinly sliced crosswise

Instructions:

  1. Massage the pork with the minced garlic and salt and place it in a 5- to 6-quart slow cooker. Pour the chicken stock, orange zest, and orange juice over the pork. Cover and cook on low heat until the pork becomes very tender, which usually takes around 7 to 8 hours. Shred the pork into small pieces, mix it with lime juice, and return it to the slow cooker to keep it warm. Preheat the broiler and adjust the oven rack to around 6 inches from the top heat. Cut the rolls in half lengthwise. Spread mustard on the bottom parts and distribute the pork, ham, and Swiss cheese evenly on top. Place them under the broiler just until the cheese melts, usually for about 1 to 2 minutes. Add pickles on top and cover with the other halves of the rolls.
